Building a new confectionary product concept with AI

My name is Gabriel Ragazi and my work as an AI Food Scientist at Prodeen keeps moving full steam ahead, and as always, I’m here to share how this journey has been unfolding.

If you’ve been following along, you’ve probably read me talking about compliance, allergens, HACCP, nutrition and other hot topics—always with an R&D twist in the mix. Well, today won’t be any different. R&D will be here, but not just as a “twist”—this time, it takes the spotlight, specially on the New Product Development

Here’s the challenge I received: we need a brand-new product for our confectionery line, to be sold in both Brazil and the U.S. Of course, this briefing also came with some guardrails - the product would need to be manufactured in Brazil and exported to the U.S., designed to hit a specific cost point, made with real fruits, and strictly avoiding any artificial flavors or colors.Once those boxes were checked, the creative freedom was entirely in my hands. A huge range of possibilities. Two completely different markets. Any type of confectionery product.

So many questions popped into my head: Which formats are trending? Which flavors resonate the most? Who exactly is my target audience? What kind of concept would make the product stand out? And most importantly—how do I sell that concept to consumers?

A lot of questions, right?
But here’s my secret weapon (which can also be yours, by the way!): Prodeen.

Beyond all the advantages I’ve already shared across my past 8 blog posts, one of the most powerful is how Prodeen supports the entire R&D and marketing chain. So, I tested it. I put it into practice. And here’s my testimonial.

The name itself is clever: “Savora” merges the English word savor with the Portuguese word sabor (flavor). Easy to pronounce in both languages, it perfectly reflects the cross-market vision of this product.

The philosophy? Healthy Indulgence.
It’s all about savoring life’s pleasures without giving up wellness. From ingredients like açaí, cupuaçu and Brazil nuts, to classics like coconut, almond and mango, Savora celebrates global traditions, diverse tastes and nutritional richness—all with no artificial flavors or colors, and a good source of natural fiber.

Target Audience & Positioning

Savora is crafted for health-conscious millennials and Gen Z consumers who want snacks that align with wellness goals without losing taste. Think of it as a premium, better-for-you confectionery—guilt-free indulgence designed for busy lives.

Packaging? Resealable pouches that keep freshness intact and make it perfect for on-the-go moments.

And here’s the most amazing part: with just one prompt, I had a full concept—brand, format, flavors, market positioning, claims, target audience, packaging insights—all based on real trend data. The research behind it wasn’t just generic or shallow; multiple sources were pulled in and made available to me. From business and innovation sites like Fortune Business Insights, to scientific publications like this one on Science Direct. All of that condensed into a single report, so fast, that I suddenly had in my hands a full strategy I could either use as-is or easily adjust if I wanted.

My concept for Savora was ready: a product made with real fruits and nuts, no artificial colors or flavors, and built on the philosophy of Healthy Indulgence — where wellness and pleasure live side by side.

With my concept ready, I asked Prodeen to help me with the industrial formulation of my products. And since I now had more than one chat running on the platform, I quickly created a Project. Honestly, this helps me so much every time I’m developing something new on Prodeen — it keeps everything organized, and all my research is just a click away, whether in the Knowledge area or the Activity tab.

And here’s the part I love the most about Projects: you can create tables with any kind of information you need. For example, I built one table for each formulation, listing the % of each ingredient along with its function. Then I went a step further and added a Smart Column to my Smart Grid that automatically shows me the average cost of every ingredient. That way, I could do a proper cost evaluation — which, as you remember from earlier, was one of the requirements for this product.

Yes, you read that right — you can literally create a column that pulls research directly from our agents into your own Smart Grid. Pretty wild, right?

And because I couldn’t resist, I created another table in my Smart Grid — this one for FOP (Front-of-Pack) evaluation. I wanted to know if my product would trigger any front-of-pack labels when sold in Brazil or the U.S. So I set up a column that shows me which seals apply, along with the current thresholds for “high in sodium,” “high in saturated fat,” and “high in added sugars.”

Using all of Prodeen’s tech and interface to my advantage.
