Navigating Food Safety & Allergens—The Smarter Way
Hey there! It’s great to have you back.
I’m Gabriel, food scientist at PRODEEN, and this is the fourth chapter in my blog series where I share real experiences as a product developer using Prodeen AI.
From finding alternative ingredients, to generating nutrition facts, and validating health claims—this journey has shown how the right tools can transform the product development process.
Today, we’re diving into two playbooks that are absolute game-changers when it comes to ensuring food safety and regulatory compliance:
👉 the Safety & HACCP Playbook and
👉 the Allergen Label Playbook.
Let’s start with something that’s not just important—it’s essential.
Building a Food Safety Plan with the HACCP Playbook
When you have your product and your production line in place, creating a robust food safety plan is more than a formality—it’s a critical step for operational excellence and mandatory for many international certifications.
That’s exactly what I needed for my product, Berry Burst Crisps (strawberry-filled pastry tubes). Using the Safety & HACCP Playbook, I was able to build a complete HACCP plan from scratch, interactively.
Here’s how it worked:
I provided the platform with: My full list of ingredients and a brief description of the product and process
From there, Prodeen AI helped me identify potential hazards, define critical control points (CCPs), and generate a structured HACCP plan tailored to my production. It was intuitive, smart, and saved me days of manual work. No blank templates, no starting from zero—just guided, step-by-step planning with technical support along the way.
Cool, right?
Managing Allergens with Confidence
Almost as cool—and just as important—is the Allergen Label Playbook.
Once the formulation of Berry Burst Crisps was done, I needed to verify which allergens might be present in the product and ensure the label would meet Brazilian regulatory standards.
So I uploaded the list of ingredients and asked Prodeen AI to help identify any potential allergens, based on RDC 26/2015.
The result?
It flagged wheat flour, milk powder, whey protein, and lecithin (if soy-based) as potential allergens based on Brazilian law.
It auto-generated the Portuguese allergen declaration, fully compliant—with uppercase, bold text, minimum 2 mm font size, just like the regulation requires
And there’s more—when I informed that my production line also handled hazelnuts and cashew nuts, the platform recognized this as a risk of cross-contamination and added the appropriate precautionary labeling automatically.
I was able to review and validate the output quickly, without spending hours digging through guidelines or double-checking formatting rules.
Final Thoughts
Food safety and allergen management can be overwhelming—but with the right tools, they don’t have to be.
Whether you’re preparing for certification, building a safer production process, or just making sure your label is spot-on, these playbooks bring clarity, precision, and speed to steps that are traditionally slow and complex.
I’ll be back soon with more insights and real-life examples from the Prodeen AI toolbox.
See you in the next chapter of the journey!
